Thank You Gift for the Teachers - Snowball Cookies



Yesterday, through Clay's cries and tears, I managed to bake some cookies for Abby's teachers. I was happy with the result, although I only managed to make just enough for the teachers and left a small amount for ourselves to enjoy! A bit disappointed after all that work and tears!

I finished wrapping them up after midnight, shame that I couln't find my Christmassy ribbons!



Anyway, these cookies are brilliant, they have the minimal amount of ingredients, and all you need to do is to roll each pieces of dough into ball shapes. So no fuss with trying to roll the dough flat into x centimetres thick for cutting! Yet they are so crumbly and nutty and sweet that you can't stop yourself from popping more in your mouth!

Hubby brought it in today and he said that Abby's key teacher was well impressed and a bit emotional, bless! So effort and tears well worth it hehe.

Snowball Cookies

(Make approx. 60)

Ingredients:

75g   Walnuts, baked in the oven at 160C for 8mins, chopped
150g   Unsalted Butter, softened
53g   Icing Sugar, sieved
Pinch   Salt
225g   Plain Flour, sieved
           Icing Sugar, for coating


Method:

1. Cream the butter and icing sugar until light and fluffy.
2. Mix in the salt and nuts.
3. Mix in the flour until just combined.
4. Knead lightly and press them together to make a ball.
5. Cover and rest in the fridge for 5-10mins
6. Line 2 baking sheets, and preheat oven to 170C
7. Take a piece of dough and roll it into a 1.5cm dia. ball. Place on baking sheet with a 1cm gap between each balls.
8. Bake for approx 15 mins until lightly golden.
9. Remove from oven, sieve one layer of icing sugar on the top (it will melt) and let the cookies cool down completely on the same baking sheet.
10. Sieve another layer of icing sugar on the cookies.
