BritMums/ Anchor Cooking Challenge and Anchor Rewards Club

I love reward schemes. You spend money on items, probably something that you are already using all the time, and after a while you will get a reward for your loyalty. Anchor is another brand that has launched their own loyalty scheme - the Anchor Rewards Club. You can use the points to either collect their kitchenware items, including the above cake tin and silicon cupcake cases, or exchange them for dining out discount vouchers. For someone who uses butter and cream quite frequently and has a thing for kitchenware, this is certainly one of the scheme that you should apply to.

To show you how easy it is to collect your points and celebrate the launch, BritMums, one of the UK's largest parent blogging network, has teamed up with Anchor to invite a number of us to participate in a cooking challenge, showing you what family friendly recipes we can whip up with Anchor Butter, cream and/ or whipped cream. So here is an easy two-course meal recipe, plus a bonus one for fun, that you can whip up in no time!


Anchor Butter, Anchor Rewards Club, Creamy Linguine


Main: Pork & Mushroom Linguine in Creamy Tomato Sauce

(Serves 4 adults)

Ingredients:

500g (1 box)        Pork (I use Pork Shoulders which is softer but has more fat to cut off) or Chicken (any parts you prefer really), cut into 1 inch cubes
1/2 to 2/3 packet    Linguine
1 clove                   Garlic, smashed
1 small                   Onion, finely diced

6-8 medium sized   Mushrooms, chopped to chunks
2 teaspoons            Ground Paprika
1/2 teaspoon          Chilli Powder (or less, but a hint enhances the flavour)
2 teaspoons            Dried Parsley (plus more for decoration)

1 tin                        Chopped and Peeled Tomatoes
1 pot                       Stock Pot (or 1 Stock cube)
1/2 Tablespoon      Tomato Puree

1 pot                       Anchor Single Cream
1 Tablespoon         Anchor Butter
2 teaspoons            Sugar
                               Salt and Pepper to season

Method:

1. Lightly marinate the meat with 1/2 teaspoon of salt, a pinch of pepper and 1 teaspoon of ground paprika. Mix well and set aside.

2. Boil water, add the linguine inside plus a splash of olive oil. Boil according to packet instructions. Drain and set aside when done.

3. In a larger pan, heat a tablespoon of olive oil with the garlic and onions until fragrant. Quickly brown the meat.

4. Add the mushrooms, paprika, chilli powder and parsley and stir fry for another minute. Add the tinned tomatoes, stock pot, tomato puree, stir well before adding the cream and butter. Stir, cover and let it simmer for 5 minutes.

5. Mix in the sugar, then add the linguine to the sauce. Mix well and season with salt and pepper to taste. Adjust the spices if required.

6. Sprinkle some dried parsley on top of each bowl and serve.

Dessert: Belgian Waffles with Butter, Strawberries and Cream

(Serves 4)

Ingredients:

8                                Store bought Belgian Waffles
20 small or 12 large  Strawberries, washed and dried
                                  Anchor Butter
                                  Anchor Original Whipped Cream
                                  Mint leaves for decoration


Method:

1. Lightly toast the waffles (lowest setting on a toaster would probably be enough), and place 2 on each plate

2. For every 2 just toasted waffles, quickly place 1/2 teaspoon of butter on top of them to allow the remaining heat of the waffles melt the butter, before you toast the next 2 waffles

3. Add 3-5 strawberries on each plate, and pipe some whipped cream on the side. If you have, decorate with a small mint leaves tip (I forgot mine!)

Ingredients:

Strawberries, washed, leaves removed, dried, and tips sliced off and placed aside
Anchor Original Whipped Cream
Poppy Seeds to decorate


Method: 

- Pipe a small dollop of cream on top of the strawberries, and gently place 2 poppy seeds on the cream where the eyes should be. Place the sliced off tips back on top as hats.
