Hubby's Birthday Cake - Chocolate Carrot Cake

I haven't baked for a while, but really wanted to bake a cake for hubby, after all, it's a milestone hitting year! I had in mind a chocolate carrot cake with luxurious buttercream and nuts, unfortunately we were hit with a stomach bug, which means plain congee, plain bread, (didn't quite follow that of course) no grease and no dairy (yogurt, cream and milk) in Chinese. 

That's just unfair! I can't let my hubby celebrate his birthday with that! So, while hubby wasn't looking, I checked on Twitter and Google, and found out that you can replace the oil in the cake with fruit puree. The recommended one is applesauce or plum puree, which will just sent him straight back to the toilet. So I decided to experiment with banana puree instead, which is suppose to combat upset tummies.

The cake was delicious, although the texture was not of a baked cake. It's more like a steamed pudding, and we were certain that it would have gone really well with warm custard! We could feel the grated carrots, taste the chocolate and a bit of the banana, and the slight chewy texture like that of a sticky toffee or Christmas pudding.

I have been wondering whether it's because I didn't whisk the eggs enough, or because I didn't use any oil that created such an interesting cake. I'll experiment again, and when I can be certain, I might just post a recipe for it!
