Homemade Vietnamese Style Cold Chicken Glass Noodles

For the past 2 weeks it's been so hot, even we foodies have lost part of our appetites. We still tried to give the children something more nutritious, but me and hubby have been enjoying our salads for dinner. Last Thursday while rummaging through the freezer for something to use for cooking, I found a box of ready made satay chicken. And for some reason I thought of Vietnamese Style Cold Glass Noodles. The sauce was way easier than I thought to recreate, and I have to say that it tasted better than some restaurant ones too!

Cold Glass Noodles is low in calories, very tasty (my version definitely is!), very easy to make, and is definitely a dish you should try on a hot Summer day. Give it a go and let me know what you think!

Homemade Vietnamese Style Cold Chicken Glass Noodles

Serves a family of 4 (any leftover would make a fantastic lunch for the next day!)

Ingredients:

4 Individual Packets      Dried Glass Noodles 
(1 packet is 1 serving, can be bought by any good Chinese grocery stores)
3-4 pieces                    Marinated and Grilled Chicken Fillets, torn into chunks, cover and refrigerate
4 portions                     Leafy Salad, washed, torn into smaller pieces, cover and refrigerate

For the sauce:

2-3 Tablespoon            Sesame Oil
1-2 Tablespoon            Light Soya Sauce
1 Dollop                       Thai (ha!) Sweet and Sour Chilli Sauce
1 Tablespoon                Sushi Rice Vinegar
1.5 teaspoon                 Ground Coriander
(I only use ground coriander but you can use approx. a tablespoon of finely chopped fresh ones)
1 teaspoon                    Dried Parsley
1 teaspoon                    Chicken Stock Powder
1/2 teaspoon                 Chilli Powder
1 Tablespoon                Caster Sugar
                                     Salt

1. Place the dried Glass noodles in a large heat proof bowl. Pour just boiled water into the bowl to cover the noodles. Soak until the noodles are softened enough to eat.


2. Drain the water and "wash" the noodles with cold tap water. Keep washing and rinsing with your hands until they have completely cooled down.

Note: The cold water wash will ensure that the noodles will retain it's texture and prevent them from sticking together


3. Cover the noodles in a clean bowl and refrigerate

4. Mix all the sauce ingredients together until the sugar and salt has dissolved properly. Season to taste. Cover and refrigerate.

To serve:

1. Make sure that all the ingredients are chilled enough before serving
2. Place the noodles in each serving dish, then the chicken and leafy salad on top
3. If you like, you can add some fried crispy onions and/ or chopped nuts as well
4. Pour 1 to 3 tablespoon of sauce over the dish
5. Stir evenly and season to individual taste

Note: If you want it sweeter, use a liquid form of sweetener (glucose, honey or syrup) instead of sugar or your food will be grainy.
