Southern Spiced Chicken with Crunchy Crumb and McCain French Fries

I have experimented quite a bit with chicken in my recipes, but have never really tried fried chicken with crumbs coating. The main reason is that the easiest coating I could think of was flour and egg, which wasn't too appealing, or the Japanese bread crumb crust, which we never have at home when we needed it.

McCain, the clever people behind crispy oven food (instead of soggy), has offered me the ingredients to make one of their recipes online - a homemade Southern Spiced Chicken with a Crunchy Crumb that sounded too good to resist! I love Southern Fried Chicken and I love a good Crunchy Crumb. I just couldn't believe how easy it was to make! Together with their McCain French Fries, salad and coleslaw, it was an amazing dinner!

As you'll be able to find their recipe online (above blue link), I won't go into details here. But I have some step by step pictures below that can give you an idea of how easy it was to make the Southern Spiced Chicken!

1. Clean and dry chicken (remove skin if you don't like them, but this recipe doesn't use oil so it might become a bit dry), then make some cuts for the marination to go in easier. Marinate with Yogurt for 20 minutes.

2. Crush crisp bread into crumbs and mix it with fresh bread crumbs, spices and seasonings (do season well).

3. Drip off excess yogurt and roll over the crumbs to make an even coating.

4. Total roasting time in the oven is about 40 minutes, although it took me 45minutes to make sure (those are good chunky chicken legs!). I took half a batch to fry in our Philips Airfryer, which took me 23 minutes only (although I did 2 minutes too long and some parts started to turn black. Ouch!). They are equally yummy, though a soggy base for oven baked chicken was unavoidable.

5. Half way through roasting the chicken in the oven, add a tray of McCain French Fries and bake for 15-20 minutes. You can see in the above picture that the oven baked French Fries (the lighter colour lot) are great in colour, and in texture as well! I'm more than happy to use oven for their French Fries! I did them in the Air Fryer for 3 minutes too long again, and because it doesn't use extra oil to fry, the French Fries were more on the hard crispy side. However I do think that it's mainly because they were in the Airfryer for too long.

Oven or Airfryer, we had a fantastic dinner, and it was so easy! I'll definitely make Southern Spiced Chicken with Crunchy Crumbs again. Maybe next time I'll use some other spices instead. We are also going to buy McCain's French Fries again! Oven baked and no sogginess, just great!
