Raymond Blanc's Lemon Cake

Here is another one of my cakes I've baked before I gave birth to Clay and became too busy with baking.

I saw Raymond Blanc's TV show showing on BBC and decided to give this Lemon Cake a go. The cake is really easy to make, and the double cream and zest of 3 lemons really make this cake stand out from all the other ones.

Apart from the lemon glaze which I had to scrape off, the cake was absolutely divine. I have baked this again without the glaze, which was too sour (tooth aching sour) in my opinion.

So if you are interested in trying this Michelin Stars chef's cake (I really recommend this recipe), you might want to try a small amount of glazing first and then decide how much you want on the cake.

You can find the recipe here. The cake is very versatile. For example you can replace the lemon zest with orange zest, double cream with single (I even tried full fat milk and the consistency was fine), and melted butter with vegetable oil. I do find that the double cream is the soul of this cake and I wouldn't replace it again unless I really have no choice.
