Lettuce Wrap

It has been a really warm Summery week and I'm sure most of my posts have revealed how we felt. A big shame that it has started to cool down now, fingers crossed it will be warm again during Easter!

I made this for dinner last night because we still felt like eating something light. But that does not mean that it's tasteless! We made sure that the flavour is strong enough to go well with the lettuce and rice. It was a really satisfying meal and we all ate more vegetables than usual!

1 clove Garlic, minced
1 small onion, finely diced
400g Minced Pork
4-5 normal sized Mushrooms, finely diced
1 large Carrot, finely diced
1 can Sweetcorns, drained


3tsp Sugar
1tsp Salt
1tsp Light Soya Sauce
2Tbsp Oyster Sauce
1tsp corn starch
3Tbsp Water

1. Heat Wok (or a saute pan) with 2 tablespoon of oil on medium-high heat. Add the garlic and onion and fry until fragrant.

2. Add the pork mince and carrots and stir-fry until the mince isn't pink anymore.

3. Stir in the mushrooms and sweetcorns and keep on frying for another 2 minutes.

4. Mix the seasonings in a separate bowl. Pour this all over the meat and stir until the seasoning is absorbed. Taste and adjust flavours if needed.

5. Serve in washed lettuce leaves and eat with plain boiled rice.
